Short and to the point: Lie.

I don't think I'm cut out for this job. Rather than continue is a position I don't think I can do justice to, I am removing myself to allow for someone more qualified to step in. If you need or would like me to help train a replacement, regardless of my inexperience, I would be more than happy to do so.

Just the facts:

Per our employment agreement of (enter date), I have fulfilled my obligations and have found gainful employment elsewhere. In order to facilitate your endeavors to provide a replacement, I would be willing to extend the date of my leave by two weeks, (date you want to quit). As such, I hereby give my two weeks notice.

If I'm misunderstanding, then just turn in a typical two week notice. It's customary and nothing to feel guilty about. Their lassitude is nothing for you to feel guilty about. Don't make their self incurred problems yours.

How about:

Dear Boss,

Although I appreciate your offering me the opportunity to interview for the permanent position I must remove myself from consideration. I also hereby tender my resignation effective [2 week, a month, whatever you decide]. I have been offered another position which will allow me to more easily pursue my educational goals.

Thank you for the opportunity to work here. I have learned a great deal and am proud to have contributed in even a small way to the operations of a Gainesville cultural landmark.

I am of course willing to help train my replacement providing that he or she is selected prior to [date you need to get out].

I'm sorry to hear that things haven't changed much since I worked at UF briefly in the '80s and that the corporate culture is still one that promotes backstabbing and passive agressive asshats. The new position at the card shop sounds ideal.

*rolls eyes* As far as I can tell, UF will never change. At least not for the better.
