After work I did my day-of-the-paycheck-so-I-can-splurge-a-little shopping. Of all things a bag of frozen cod/potato cakes caught my eye. I've never had such a thing but there were only 6 carbs per cake (4 cakes make a very nice meal) so I thought I'd give them a try ( Read more... )

That does sound like it'd be a tasty substitution for the cod. So many of the recipes for cod cakes call for salt cod, but that's not exactly common around here. I'm sure I could find it but since this is for fresh cod and cod is relatively inexpensive, I'll go with this one.

OH MY GOD. I know I should never read your lj late at night. I know it and I do it anyway and I always end hungry and in the kitchen! Shit, it's half 1am and my stomach is rumbling.

You know, it was just one of those odd times, because normally if I'd asked myself - what's for dinner and came up with 'cod cakes and creamed spinach' I'd be giving myself that 'wtf?' look. But it was really tasty. I can't wait to make my own cod cakes that'll taste a little more like fish and less like potatoes.
