Buuurp! Yum!

After work I did my day-of-the-paycheck-so-I-can-splurge-a-little shopping. Of all things a bag of frozen cod/potato cakes caught my eye. I've never had such a thing but there were only 6 carbs per cake (4 cakes make a very nice meal) so I thought I'd give them a try.

When thinking of what to have with them for some reason my mind settled on creamed spinach!

Now, I love spinach in all its forms. I was that weird kid in school who would eat the other kids spinach (yes, even canned spinach) when bribed. In elementary school if you didn't clean your plate you couldn't go out to recess afterwards. You had to sit in the cafeteria and, I don't know, contemplate your sins of ungrateful for the food you were given when there were starving kids in - I think if was Biafra at the time. I eventually came to a mutually beneficial arrangement with a kid who couldn't stomach spinach but would eat creamed peas - my downfall in a relatively non-picky diet.

I've never made creamed spinach but I like it. Last time I checked online the only recipes I could find were starchy and fat laden ones packed with more flour and cheese than anything else. It was basically a starchy white cheese sauce with a few specks of green in it. But I tried the Food Network site and came up with much more appetizing ones. I finally settled on the one by Anne Burrell. Spinach, onion, garlic, (I used half & half instead of milk), a little Parmesan, a good grating of fresh nutmeg, a pinch of cayenne, salt and pepper. It was absolutely delicious and so quick to make. Next time I'll try the one that includes a little bacon. Absolutely nothing wrong with adding a little bacon.

The cod/potato/little bit of cheddar cakes were more potato cakes with a little cod but they were tasting. It just made me realize I could do a better job of it though. Next time I'll make my own and use a variation of Emeril Lagasse's Cod and Potato Cakes. He still has 3 c of potatoes to 2 c of cod but that's probably more actual cod than the ones I ate tonight had.

I also replaced my food processor tonight. Mine broke over a year ago and I hadn't replaced it but I've certainly missed it. I wish I could afford a really good one but I'll make due.

On the way out of the store I also had the yen to see what Red Box had and I wound up renting Priest. Not bad. But now as with all things for the last few years I want to transform it (and by that I mean I want someone to do it for me) into either a Supernatural and J2 remix. *G*
