I had 2 lbs of hamburger thawed out all ready to cook the meat for enough taco salad to last me through the weekend but then I was reminded yesterday at work that tomorrow is the big taco salad day the store earned for being Big Three Accident Free for 30 days. In other words, no customer Slips, Trips or Falls for which the company automatically deducts just under $10,000 from our potential bonus fund to cover the expenses. So I wanted something else to do with the ground meat.

Solution! Flat Persian Meatloaf.

Of course that's not the real name of it but I learned it from my friend who married an Iranian years ago. He was a dick but the recipe is great.

2 lbs ground meat (your choice, I used all sorts of combinations)
1 med onion, peeled (root side left intact) and grated
3-5 cloves of garlic (depending on their size and your preference), grated or minced
2 eggs
1 tsp turmeric
1-2 tsp cumin
1-2 tsp coriander
1/2 tsp cayenne
salt and pepper to taste

Mix it all very well, squishing it very well with your hands. Unlike meatloaf that you don't want to mix too much so it won't compact down, you want that for this because it gets patted out in a baking dish to about an inch thick. Or even better you can form it into patties and grill it.

Bake at 350 for 30 minutes cranking up the heat to 450 for the last 7-8 minutes for a little browning. There'll be a lot of liquid surrounding the meat (which has shrunk). Son't remove the meat immediately, let it set for about 10 min to reabsorb some of the liquid.

Serve it with a tzatziki type sauce called maast-o khiar:
2 cups of plain Greek yogurt
1 largish cucumber, seeded and grated
2 cloves of garlic, grated or minced
3 tsp dill weed (more or less according to taste, flavor will intensify on sitting)
salt and pepper to taste
I like a nice dash of cayenne
Mix all together and let it set at least an hour before using to meld the flavors. Longer is better.

I serve mine with Jasmine rice and steamed fresh green beans.

So good! I completely stuffed myself.

Also, between the extra money on the paycheck I get tomorrow from all the overtime last week and the fact that there are 3 paychecks next month instead of 2, I'm going to be able to get the heating/cooling system fixed in my car. I won't have to go through another winter not able to see out of my windshield and freezing my ass (not to mention my fingers, toes and nose) off.
