Somewhat bizarrely, you had a cameo role in my dream last night (even though I've never met you!), accompanied by a goth/metaller girl who was wearing tights with the word 'zombies' printed in capital letters along the length of each leg. Luckily my dream didn't involve any actual zombies, though. The main plot was that it was New Year's Eve, and I had been meant to be going out with colleagues from work, but had completely lost them in all the crowds of people celebrating - which is when I found you and the zombie-tights girl instead.

I find with flying in dreams that I can do it perfectly effortlessly when I'm not thinking about it, but that it becomes difficult as soon as I'm consciously trying - same sort of thing you describe about it being difficult to get off the ground (though 'knowing' I should be able to). I guess it is a bit like Arthur Dent in Life, the Universe and Everything - it's perfectly easy to do, so long as you don't remember you're supposed to be hitting the ground.

I don't always have flying dreams like that (sometimes I fly quite easily) but I have had many many many like you describe, where it's like moving through . . . not even water, like molasses. I can just barely move. I'm hardly even floating, it's just like I'm stuck in the air, struggling to move up. It's still awesome, but very frustrating too.
