As jams go, it's really not a difficult one to make; I could give you the recipe I use. All you need are peaches, a lemon, sugar (I use raw sugar), a scale (so you can calculate your sugar/fruit ratio), a wooden spoon or silicone spatula with a heatproof handle, and a deep pot (I use an old pressure cooker).
I thought jam in general would be harder to make, but it isn't that difficult. I've only been making it since I moved, so, about two years? And I didn't have anyone showing me, I just used recipe books.

Australia? Curses, foiled again in my quest for Peach preserves/jam etc.
It would cost way too much to ship.
But I'm sure that the peach jam will sell well.
