On the origin of the name "hobbit", canon already relates it to an old Rohirric word Holbytla, which means "hole-builder". Maybe it's not so much the literal meaning of the word that is "humble" as a stage in their history before they crossed the Misty Mountains where they tried to escape genocide by taking to dwelling in holes dug into hills.

That's not the only old word that remains in Hobbit language, there's also "smial" (hobbit holes), and "mathom". Smial may relate to the idea of trying to escape persecution, but I have this mental image of mathom being even older - a name they used to use for the things they stole.

Of course, as the prompt says, the only ones left who know the old meaning is Bilbo and the Gaffer.

Well the canon reason for their migration was that they were possibly trying to get far away from Mirkwood after it started turning into Mirkwood. I'm just commenting on the meaning of the word for the sake of anyone who decides to write a fic for this, so they can mesh the canon meaning of "hobbit" with the prompt.
