For the past 5 years or so, my family has done a holiday tradition that we call the "E-hat". I'm also a knitter and if you have time to learn to knit, you could probably do up a nice scarf or a hat or both for your chosen relative. If you use a bulky yarn, it will take a very short amount of time to knit one up.

One of my aunts makes a personalized family calendar for my grandma every year. It lists everyone's birthdays and anniversaries, any upcoming weddings, graduations or babies being born, and the date of the family reunions she is part of. She uses family photos (old and new) and I think she usually does it so that I'm in the January spread, since that's my birth month, etc. My grandma absolutely loves it - and now it's easy to get fresh pictures of almost everyone because she just swipes them from Facebook.

For a woman: a painted silk scarf. Totally fun to do, and she still wears it.

For a man: a custom tool belt, with leather (burning leather = fun DIY).

For a kid: a home made teddy bear, filled with buckwheat, good for reheating. He sleeps with it.

For an older family member: a video montage of old photos, from his grandparents to his grandchildren.

For my old college roommate: knotted bead necklace and earrings. Beads are tons of fun and require little skill.

Vanilla extract? I buy beans from beanilla.com and they are very reasonable. Toss them in a jar with vodka, wait a few weeks, ta-da! If you're going that route, buy a few extra and throw those in a jaw with sugar - vanilla sugar is very good in coffee.

I made a video for my parents' 25th wedding anniversary. The first half was a montage of their early years/wedding, then I did interviews with most of their friends/family, and then it ended with a montage of more recent pictures. I tried to include a number of pictures of my grandparents who have passed away. It was a huge hit and crazy simple to do (I have no real video talent).
