Hello, hoping for a bit of emergency rescue advice.....

The recipe says to cook it to 220 F. Do you have a thermometer in the pot? If you've reached the target temp and it's not gelling when you test it, just add some packaged pectin. It sounds like you didn't get enough pectin out of the parts in the cheesecloth.

No, I don't have a thermometer - I meant to mention that.

Would you have expected it to start setting by now from what I've told you?

Maybe a bit of gelatin mix? Just enough to get it to the right consistency. If I'm not mistaken my mom uses it in her jams.

I don't have anything like gelatin or pectin in the house. Would it survive sitting in my fridge overnight and then me re-heating it and adding something to help make it set tomorrow?

if you put a teaspoon of it in the freezer and wait 10-20 min. or so, then check it, that will tell you if it's gelled or not.
