getting on towards sundown

Well, the sourdough starter's not going anywhere and I've got pork in the freezer, but on the other hand tonight's soup includes vinegar, celery, and some stuff that I'm fairly sure counts as bitter herbs; and I've got hard-boiled eggs in the fridge.

Not bad for a shiksa ex-girlfriend.

Question out of left-field: Do you use spelt in your sourdough starter?

Nope. Water, flour, yeast, and patience, but no spelt.

Ah darn. We use spelt in ours and our bread so far (this is our third time) always ends up really really dense. I was wondering if there was a way to fix that.

Are you using spelt flour and wheat flour (ratio?) or just spelt?
