I'm with you on the inconceivable taste of many readers (and writers) of fic. I rarely read fanfiction now. (Though I still get the urge to write it once in a while.)
I write a LOT. I post on AO3 because LJ hasn't been very reliable for me (its something to do with my internet, because it's ONLY at my house that LJ refuses to work for me sometimes) but generally I write tons. I read tons too, but mostly because I keep finding new pairings I like and decide to read EVERY FIC I CAN and by the time I"m done with that, I'm ready to do the same with another pairing.
That bakery fic is still my favorite bandom fic, I hope you know... that was my first EVER bandom fic... I knew NONE of the characters, NOTHING EVEN REMOTELY about them and because I seriously ADORED YOU TO DEATH, I beta'd that for you, lol! And it turned out to be my favorite EVER bandom fic

Alas, the link to my AO3 is in the sidebar! I do have one fic here on LJ (I think) but then LJ started being a turd so I started posting them on AO3. You don't have to be a member or anything to read, they're all unlocked. If you want specific links and info, my masterlist (also linked in the sidebar) has all that!
I read a *lot*, but don't write much of anything. Personally, I'm frequently looking for something lighter and not all-consuming with EMOTIONS, especially if I'm re-reading.
I'm also trying to decide, from the tags and one or two sentences, if it's a fic I want to read or not. For the two Avengers fics you mentioned, the idea of Coulson with tattoos made me go "Neat, I wonder where she's going with this". While the science bros had me going "I've seen this idea before, and this looks kinda depressing".
So that's why I jumped all over the tattoo one, and skipped the science bros fic the first time I saw it.
Idk, I guess I'm just the opposite. I mean, I like a little 'whatever' fic every once in a while, but I like a STORY! It's one of the reasons a lot of my fics have lower ratings; I just can't be bothered to write sex when I could be getting on with PLOT! I don't read PWPs basically AT ALL for the same reason.
I read fics the same way I read books: Looking for a good STORY, not just something to pass the time.
