PUMPKIN! More than Just a Jack O'Lantern (or Pie)

You can blame this post on bluestocking79. She posted a couple of pumpkin recipes and reminded me of my lurve for things pumpkin. I tried her Pumpkin Streusel Muffins and they were delish. So in turn I offer some favorites I've tried and retried in the weeks since.

I think I'll skip the bread, but the cookies and soup sound delicious. I generally have vanilla soy milk on hand; that's what I'll try in the soup. I know that it sounds like it might be too sweet or "off," but I wonder ( ... )

The bread really is wonderful--but is a pain in the ass, so I can't blame you. The cookies and soup are a lot easier to make.

That was my thought--but Sil said its a common substitution for something like this by vegans so... And if you're using a vegetable broth, the soy milk would at least provide some protein over almond or rice milk.

As for your pumpkin cheesecake, I've made two myself and will give the recipes if you'd like them.

I'll take the second. Though I'm not an advanced cook *points up to the first soup disaster--I suspect that one my fault* But I do like to try things--and hey, pumpkin cheese cake? With dark chocolate? I'm so there! Especially since I think I'd prefer that to pumpkin pie for Thanksgiving.

Actually, just to butt in-I usually use plain, unsweetened soy milk if I'm pretending to be vegan. I think the vanilla would be too sweet in the case of the soup, but I wouldn't hesitate to use it in something dessert-y.

These look great! I'm a sucker for anything made with whole-wheat flour, and I have yet to find the curried thing I don't love. So I will look forward to trying these (or more accurately, getting Boadicea [partner] to try them, since she is the foodie who can cook, and I am the one who happily eats her cooking and, when by myself, mostly just heats stuff up in the microwave).

Ha! Well, there should be at least one good cook in the household. Because canned and frozen dinner and convenience food living? Not a good. All these I tried out recently at least so they're tested. And I'm not that advanced a cook, so they should be hard to ruin.

The cakey pumpkin cookies sound very good. They're similar to the ones the pumpkin spice cookies that I make, but different enough to intrigue me. The inclusion of the whole wheat flour is a good thing, too. I'll definitely have to try those. Pumpkin Curry soup is a must-try (that's a match made in heaven), and I'm intrigued by a pumpkin bread that isn't a quick bread. (I have several of those.) I have been playing around with my bread machine this autumn, so I just might adjust it for the machine and try a loaf of that. I'll have to swap in regular raisins, though, because I know several people with sulfur dioxide allergies.

I'm going to continue to experiment with those--maybe next time try the white/whole wheat mixture with canola oil and splenda to see if it's as good as the above to see if it's only the entirely whole wheat version that loses the cake-like texture and extra goodness. Or try Sil's variation. See just how healthy I can make the cookies without losing the deliciousness. As I said, the recipe seems nigh unkillable.

It's a very easy, simple recipe too. And low in fat and nutrient rich.

I'm intrigued by a pumpkin bread that isn't a quick bread.All the recipes I looked for online were quick breads--but I remember the pumpkin bread I loved to buy wasn't. So I started looking through my cookbooks--the Jane Brody recipe came closest to what I remembered, but didn't have ( ... )
