PUMPKIN! More than Just a Jack O'Lantern (or Pie)

You can blame this post on bluestocking79. She posted a couple of pumpkin recipes and reminded me of my lurve for things pumpkin. I tried her Pumpkin Streusel Muffins and they were delish. So in turn I offer some favorites I've tried and retried in the weeks since.

The inclusion of the whole wheat flour is a good thing, too. I'll definitely have to try those.

I'm going to continue to experiment with those--maybe next time try the white/whole wheat mixture with canola oil and splenda to see if it's as good as the above to see if it's only the entirely whole wheat version that loses the cake-like texture and extra goodness. Or try Sil's variation. See just how healthy I can make the cookies without losing the deliciousness. As I said, the recipe seems nigh unkillable.

Pumpkin Curry soup is a must-try (that's a match made in heaven)

It's a very easy, simple recipe too. And low in fat and nutrient rich.

I'm intrigued by a pumpkin bread that isn't a quick bread.

All the recipes I looked for online were quick breads--but I remember the pumpkin bread I loved to buy wasn't. So I started looking through my cookbooks--the Jane Brody recipe came closest to what I remembered, but didn't have the orange juice and peel or the spices and walnuts (Yes, I remember those ingredients.) So I tinkered, and did love the result. Using a bread machine should make things easier (unless you want to get out aggression through kneading....)
