What you missed last time: I love squash. I love this time of year because we get three things: candy, apple cider, and squash. I am so with you. Fall is my favourite season and apple cider is probably like 50% of the reason why. (The other half is stuff like pumpkin bread, amazing weather, haunted hay rides, corn mazes, and Halloween. XD) This post makes me feel like I am missing out on some huge culinary adventure because my exposure to squash has been horrifically limited to, like, "the yellow squash you get when you order the mixed vegetables at places like Outback." D: My family is so ignorant of American foods and they've infected me with their retardedness. (I swear in Scotland there are only three vegetables: potatoes, turnips, and carrots. And maybe leeks or radishes. Maybe. And more potatoes. Oh, and BEETS. ..But for cooking, yeah, it's either "potatoes" or "throw it in an unidentifiable veggie stew.")

I only recently discovered the existence of apple cider vinegar and have decided to cook with it as much as possible. Now I just have to find recipes using it beyond "[__fillintheblank__] Normandie."

oh man oh man. you come from the country of potatoes, beets and leeks? I love all three of those. T_T But I've also recently discovered that I also like fennel, which is kind of like "wtf? fennel?"

Butternut squash is delicious, so is pumpkin, acorn squash, and these mini sweet dumpling squash we got. My mom and I rant about squash, we love it, and it's only this time of year when you can get them and they're any good. Like apple cider, you can only get them really fresh during one part of the year, ah, sad.

I HAD AN AWESOME RECIPE FOR APPLE CIDER VINEGAR. If I remember it, I'll send it to you!!

Mmm. I only discovered I liked butternut squash last year (it's like my tastebuds suddenly went, "HEY! YOU! YOU LIKE SQUASH!" and I was like "ew, no I -- wait, I do") so mmmm recipes. Even though I can't cook worth beans. I still want to try!

And I love the layout. *_* It's going to be very, very cool, I can tell. ♥

You should try!! I didn't realize I was decent at cooking until a few weeks ago, now I want to cook everything. It might be the influx of all these beautiful vegetables, and I want to treat them right, but!! This time of year brings wonderful apples and wonderful squash.

OH GOD. Thank you for posting these recipes! I've developed a deep affinity for cooking and baking over the past two years, and I am always on the lookout for new things to try. There's a small part of me that desperately wants to go to culinary school just to learn new techniques. My stuff isn't exactly gourmet right now, but it's not exactly kraft dinner either. I can't wait to try some of these--I love squash too. Zucchini is a staple for me (I know we're talking WINTER and not summer here, but hey). ♥

So, uh, have any more recipes you'd like to share? >_>;

My mom makes this hardcore zucchini soup. OH you know. I made this awesome marinara the other night because I had to get rid of the zucchini, the fennel, and two leeks. we had a ton of tomatoes, so I boiled them, skinned them, diced them; diced the rest of the stuff and then fried it in the pan like a marinara and served it over noodles with a bit of parsley. I know I still have the recipe if you want it. ;DD

OKAY I'LL DIG IT UP FOR YOU and see what else I can find. I know we made a killer fennel soup, and the host-home to our organic vegetables gave me a recipe for acorn squash stuffed with pear, kale, and topped with parashan cheese. she said it was in our cookbook, so I'll have to try it.

I'M MAKING THE MUFFINS NOW!! they're cooling, cross your fingers. (the batter was to die for)
