To me there is still never any reason to do anything with kale (if you aren't going to eat it fresh) than make kale chips. they are pretty effortless, don't require much in the way of additional ingredients, and you can never have too many of them!
Rip the leaves off the stems and into bite-sized pieces. After that it is olive oil and whatever seasoning you happen to like. Sometimes we just do generic "seasoned salt" that is in the cupboard. Sometimes this "garlic and herb" seasoning i have that is garlic, onion, paprika and red pepper. Another favorite is sea salt and nutritional yeast. Or just salt and lemon juice in addition to the oil. Chili powder and salt is also good, if you like spicy

I genuinely love sauteed kale with very little else going on (I usually cook it in butter with garlic and then lemon juice added at the very end), but found a wicked crowd-pleasing recipe last year involving kale, italian sausage, sweet potatoes, and an apple cider/vinegar/mustard sauce. It was ridiculously good (more of an autumn dish than a summer one, but). I think I was so impressed that I even posted it in my journal. :) Thank you for reminding me!

In a deep frying pan, cook a pound of bacon.
Remove the bacon and add onion, kale, and chicken broth.
Eat the bacon. Discard contents of the frying pan.
Isn't kale healthy and delicious? :-)

Do you destem it first? You coat it with olive oil and some spice?
