Rip the leaves off the stems and into bite-sized pieces. After that it is olive oil and whatever seasoning you happen to like. Sometimes we just do generic "seasoned salt" that is in the cupboard. Sometimes this "garlic and herb" seasoning i have that is garlic, onion, paprika and red pepper. Another favorite is sea salt and nutritional yeast. Or just salt and lemon juice in addition to the oil. Chili powder and salt is also good, if you like spicy.
Then in the oven at 350 for 10 minutes or more. I'd starting checking at 10minutes and pulling out any that are done. The cooking time is the most important in my opinion because not enough and you just have limp kale, too much and they are burnt.
I've never actually known any kids not to like them. I serve them all the time during kale season, since our house is where the kids hang out. Some flavors are more popular than others, but they are all good! :)
Just experiment with small batches and different flavors until you find some you like! Any "losers" can just then powdered and saved to be thrown into soups, smoothies, or whatever. I put dehydrated powder kale into our christmas cookies, so hey.
ETA: We also follow this same procedure with brussel sprout leaves, usually just the outer ones, and they are just as good!
