Farm share day

I am currently:

Boiling beets to peel and refrigerate and eat cold tomorrow.
Frying up turnips and ramps with a potato as our starch.
Frying up a mess of greens: turnips and swiss chard and beet greens, mixed with a few stray pieces of broccoli and asparagus.
Grilling pork chops from a pig named "Sam".

Dinner is almost ready.

My husband is eating the thinned beets with greens from the csa for the first time and ENJOYING them. I really can't comprehend why he's refused to eat beets for this long, but he ate them by accident the first week when he thought they were just greens and ate the teeny beets in dinner. I adore CSAs.

What else do you do with your beets?

Sometimes I slice them in with sour cream. I tend to like them cold, these are so sweet that it's like eating candy.

My daughter likes to grate them into muffins.

I've pickled them before, but not recently. Mostly I don't get enough to make it worth putting them by. I may actually still have some pickled from a few years ago, come to think of it.

I also do not eat beets, because I remember them from childhood - pickled out of a can. Ick. Didn't like the sweetness, and didn't like the rubbery texture. Any way to fix them that would tone down these qualities?

Do you have any use for smoked ham hocks? (When you get back from camping and plug your freezer back in?) I have a bunch -- they're delicious. They're from Dietrich's Meats in Pennsylvania -- which is local when you're driving home from North Carolina... I usually stock up and/or my sister brings them. But I've accumulated a backlog now that I live with so many vegans and have more than I'm going to use, ever. Do you want some? They're so great for cooking with a big pot of beans. I'm sure there are other things to do with them, but I can't think what... Let me know!
