Salubrious Salad

So, I watched Alton Brown promote the salubrious qualities of salad recently on the Food Network. He even showed how to make homemade croutons from Italian bread, but I'm not sure if I want to go that far yet. In any case, I've thought about trying out a baked chicken salad, maybe with strawberries. Perhaps something like this ( Read more... )

We tend to eat salad-wraps every friday, after doing our weekly grocery shopping -- because it's easy and tasty.
The salad itself isn't anything special (diced tomatoes, smoked chicken and a packet of mixed salad greens), but the real kicker is the wasabi mayonaise we make. Simply add some wasabi to mayonaise in a bowl, mix well, and enjoy the extra 'kick'!

Home-made Caesar salad is amazing. I've been eating that for days, since we've had a good run of Romaine here. :)

Reduced-calorie mayo is from the devil. Just like Zima and Nutrasweet. To paraphrase the Bad Catholic's Guide to Good Living (the authors talk about their travails in trying to make an Atkins-friendly cookbook and one of them got frustrated, through up her hands, and say "I can't do this! This food... this food is from the DEVIL ( ... )

The only salad I know how to make is ridiculously simple. Which fits with my general cooking credo. ;D

Take a whole ripe tomato (large, preferably), about 4 oz of mozzarella (either one of the large balls or those little balls) and some basil, chop it all up and arrange it artistically on a plate. Drizzle some vinegar and a little oil on top. I recommend raspberry blush vinegar, it's far tastier than regular vinegar, and it really brings out the natural flavor of the ingredients. Also tastes great as a sandwich, but I recommend crusty bread so it doesn't soak through from the vinegar and oil. Also, this tastes good without the mozzarella, but can you call something with only three ingredients a recipe? x.x

I don't eat a lot of salad, but when I do it is simple.

I put cherry tomatoes, Frozen Mesquite Chicken breast (out of the freezer case and I microwave and cut into strips), and ranch dressing. On any type of lettuce cause I am not that picky.
