This came out REALLY well. It was well worth the headache to find the mahi-mahi. I didn't use the coconut milk, as I was full flat-out hustle mode, but it came out wonderful.

This came out very nicely. If you can't get the pineapple wedges, and need to use canned, use chunk as opposed to rings. The rings are too thin for the skewers.

Very good, very tasty. Suggest having an appropriate flavor of stock on hand though, as it was exceedingly thick after mashing. We added vegetable stock, I could see beef or chicken being added depending on the intended use. For additional flavor, I suggest substituting bacon drippings for the grapeseed oil.

Yeah, I know I said I'd post daily. But I actually worked on stuff yesterday, so there.

I followed the recipe straight on this one. I would, however, suggest having twice as much beef stock and wine on hand in the very real event that you need it to maintain fluid levels.

Well, here I am, back at work. Been on vacation from work since 12/23/08. I didn't realize I needed that time off until last Friday or so. So, here's a kind of day-by-day accounting of the last two weeks or so...

This is the pork loin I made last night. It may be my oven, it may be the way I was doing it, I'm not sure, but I would recommend a longer time between glaze applications, maybe 15-20 minutes. Otherwise, this was phenomenal.
