It's a bit... awkward and inelegant. It doesn't *look* like a buffalo.
The leading is loose and inconsistent, and the detached tip of head/tail/legs only serve to make it harder to read and to look less like a buffalo.
Somewhere in this community's past, there's a link to a portfolio containing a "BUFFALO" logo that's shaped just like a buffalo, looks like a buffalo, and works really well. While yo obviously shouldn't rip it off, it'd be good to find it and see what the designer did - the pieces fit together much better, were easier to read, and didn't include any extraneous/non-letter bits.
I caught the buffalo image but until I read it was called Bubba's my brain didn't read it as Bubba's. I like the general idea of it. Not sure what I'd tweak. Sorry I'm not more helpful.
I think you should definitely make the buffalo running. People don't like their meat from animals that just stand around doing nothing all day. I would also try one with a hamburger bun on the top and bottom of it. It might look dumb, but if it works then it'll be obvious what the logo represents. And make the letters fatter and more roundy.
Buffalos can run very fast. But my neighbor's own a buffalo farm and they literally do nothing but stand around all day.
The only thing that really bothers me is the very straight line on the left side of the first 'B'. If you join the 'B' with the bit representing the skull and connect the tail with the 'S' I would like it better.
I had no trouble reading it or seeing the buffalo.

I can easily tell it's a buffalo, and I can easily tell that it says Bubba's.
