My brain hurts. Why is he collecting apple seeds? I know by the mid-1500s they were fanatics about grafting and I believe they knew that apples don't come true from seed.

there are certainly other situations where he talks about grafting, so he does do that. But you only get new varieties from seed, so he may well have been growing them on in his nursery, evaluating them, keeping the good ones and throwing out the others, etc., as modern propagators do.
