Is the fantasy wearing on you to the point where you're likely to someday leap up, scream "I don't give a damn about Paris! and storm off?
If that's the case, then after (or before, if you can catch it in time) say, "Dear Heart (or other appropriate name of affection), I know how deeply you want to go to Paris. I'm afraid it's not nearly as interesting to me. I don't mind talking to you about going to Paris once in a while, but could we have conversations (or more conversations) that don't include Paris as well?"
Depending on the person, you might even be able to follow up with "I pretty much have the whole thing memorized by now, anyway."
