Bread and cake

I did some baking a few days ago. It seems like ages since I last did some but I had a recipe I wanted to try out as well as a bread kit I'd picked up in Aldi.

The recipe was for almond muffins with strawberry chia jam. The muffins were made with ground almonds, coconut milk and honey so they were gluten-free as well as dairy-free and sugar- ( Read more... )

Hmmm ... I love the smell of freshly baked bread. Yum!

Will you make the muffins again with the strawberry chia jam?

It's such a nice homely smell. And fresh bread is so good anyway.

Possibly not, I'm not a big fan of seeds in jam as it is and the idea of purposely putting them in is weird!

Interesting idea, a bread kit. I know they have those for pancakes, but bread is new.

I've seen some other brands do bread mixes where you just have to add the liquid but you still need a bowl to mix it in and a tin to bake it. With the kit being from Aldi it was only cheap so I thought it was worth a try!

Glad the bread worked so well, not come across a bread kit before, clever idea. Shame the muffins weren't so great, worth doing again and tweaking the recipe some?

I've seen mixes before where you still have to add the liquid and need a mixing bowl and baking tin so this was an interesting variation. I was curious as to what spelt bread was like anyway so this was a good way to try it out without spending a fortune! To be honest, I'm not entirely sure what I could add into the muffins. The main flavours are almonds, coconut, honey and vanilla so they're not exactly strong to start off with so anything you add is just going overpower them.

Yes, most of the packet bread mixes I've had assume you have a tin, or at least a baking sheet to do rolls on..

Well the jam they intended? Minus the chia seeds..

It wasn't even proper jam, it was more like pureed strawberries. Rather an odd thing really.

The bread certainly wasn't as messy as it didn't require kneading or anything. Much quicker too because it had no yeast so it didn't need to sit and prove which takes ages!
