Bread and cake

I did some baking a few days ago. It seems like ages since I last did some but I had a recipe I wanted to try out as well as a bread kit I'd picked up in Aldi.

The recipe was for almond muffins with strawberry chia jam. The muffins were made with ground almonds, coconut milk and honey so they were gluten-free as well as dairy-free and sugar- ( Read more... )

Glad the bread worked so well, not come across a bread kit before, clever idea. Shame the muffins weren't so great, worth doing again and tweaking the recipe some?

I've seen mixes before where you still have to add the liquid and need a mixing bowl and baking tin so this was an interesting variation. I was curious as to what spelt bread was like anyway so this was a good way to try it out without spending a fortune! To be honest, I'm not entirely sure what I could add into the muffins. The main flavours are almonds, coconut, honey and vanilla so they're not exactly strong to start off with so anything you add is just going overpower them.

Yes, most of the packet bread mixes I've had assume you have a tin, or at least a baking sheet to do rolls on..

Well the jam they intended? Minus the chia seeds..

It wasn't even proper jam, it was more like pureed strawberries. Rather an odd thing really.

Maybe whoever invented them tasted them and thought "they're so bland, what have I got to hand to help?", and voila, mushed up strawberry thing :)

Hehe. The original recipe was on seasonalberries.co.uk - Seasonal Berries programme is a year-round campaign funded by British Summer Fruits, an industry body that represents 98% of UK berry growers. I'm guessing the jam came first and the muffins after!

Year round summer fruits - isn't that a bit contradictory. But yeah what can we do with all this jam sounds probable! :)
