It's very dark and gamey, if that makes any sense? It's not overly spiced or fatty so the flavours of the meat come through. A little goes a very long way.

How did you like the emu? I've tried it before and never been a fan, but am always up for new things. whereas kangaroo is one of my favourite meats.

As the chorizo is emu and kangaroo I can't really differentiate between the two meats...it's certainly quite rich and a little bit of it goes a long way. I threw some in with some spaghetti I was making and it really made a difference.

The farm also had crocodile but sadly by that point our little cooler box was filled to the brim!

Crocodile is a strange meat! It has the texture of white fish, but tastes more like poultry. Very unusual.

And hmm, the idea of blending the two meats together in a sausage actually makes a lot of sense and sounds entirely delicious.
