arg, macarons!

 seriously, i am going to make these things until i get them right!!!

i made them for the first time the weekend before christmas using this recipe. i made my own almond meal by grinding almonds in my food processor for quite some time and them letting them dry out in the oven for a while. the cookies didn't really flatten out when i piped them, so ( Read more... )

I usually make my macarons from a 17th cent. recipe from Elinor Fettiplace..

100g Pure Icing Sugar
100g Almond Meal
1 Egg White beaten
a few drops of rose water...

Sift dry, and wet ingredients and sift... Mix that all together
Moisten hands with rosewater, roll into balls with 3cm diameter
Pop on a baking sheet - make at 180degC until light brown.

let cool on baking sheet until cold then remove...
