Prickly Pear & Passion Fruit Macarons

I finally made macarons for the first time! They are a bit of a pain but worth it in the end. The filling is a prickly pear & passion fruit curd (prickly pear is the unusual ingredient this week).

I have never had a macaroon or a prickly pear, but passionfruit is delish. These look adorable and I love the colors - beautiful!

How would you describe the taste and texture?

Thanks! Prickly pears taste like watermelon but with a much different, thicker texture (kind of like a mango). Macarons are chewy, with a kind of crunchy outer shell and are very sweet and decadent. They're infamously difficult to make, but totally worth the end result!
