Looks like it could totally be made without the mango? I think it sounds super, and I LOVE curry but have never made it. I just don't care much for mango.

I think it's the sweet and spicy elements she's going for. I'm a meat and potatoes type of gal so I'd totally sub potatoes.

It can be made without the mango but you'll need to do something to bulk up the recipie otherwise you'll just end up with oodles of sauce. Chick peas (garbanzo(?) beans will work brilliantly.
