a little healthy-ish vegi quiche

Normally I'm a big old chicken when it comes to baked goods, but I went out on a limb to make a nice vegetarian dinner that doesn't FEEL vegetarian. I can saute my savory little heart out and make an apple compote the kills men, but baking is scary. Plus, the Boy and I are trying to lose some weight, so how can I make something like Quiche ( ( Read more... )

I think using an entire stick of butter in the crust may somewhat negate the healthyness. Regardless, I'd eat this entire thing myself. Looks great.

Maybe, but it's SOOOO GOOD. There is absolutely no substitute for buttery crust.

I suppose to make the dish healthier I would have omitted the crust altogether and made a fritatta instead of a quiche. It does look good though and I am a sucker for artichokes.

My suggestion: couldn't you use just egg whites or leave out some of the yolks?
