Faux Manicotti or Lasagna Roll-Ups

I made a faux manicotti-type dish yesterday - my husband couldn't find manicotti shells at the grocery, so I used lasagna noodles.  It turned out that I actually think that was better.  I've got a photo essay of the faux manicotti, which I'm calling Lasagna Roll-Ups.  Original, I know ( Read more... )

Clever, those look yummy. I always think that the filling to pasta ratio is off in manicotti so I can see why this would be good.

Agreed. Ricotta's cool and all, but not in mass quantity. My mother loves it, so I grew up picking apart stuffed shells and manicotti.

To the OP? These look awesome--I may have to try this.

My husband really liked the fact that there was more noodle and he liked that there was no tomato sauce between the layers. I think the next time I make it I'm going to try a white cream sauce.

I hope you love it! I think it would also be good with a white cream sauce, alfredo-type, but I was too lazy to make that last night. ;D
