Were the dessert sushi made with vinegared sushi rice?

Yup:) The recipe I have for the sushi rice makes the rice very sweet and tangy, but the peanut butter just blends the flavors so well.

I had sushi with peanut butter and banana at Ginger in NYC (1st ave between 6th and 7th) and it was pretty good. Gorgeous cookies, btw

Just take your favorite shortbread recipe roll it out till it's about a 1/4 inch thick, cut out with 2 inch round cookie cutters, bake for half the time the recipe calls for, place a chocolate candy piece in the center, then bake till cookies are slightly browned around the edges.

BTW, gotta press the chocolates into the half cooked dough so it forms a slight well. Makes for a better presentation.

I can't remember what they were called but they're the chocolate disks you find in the bakery isle to make candies and etc.
