does anyone have a good and hearty recipe for colcannon? i want to make this traditional irish dish for samhain. i've googled and searched and there are various versions of it...some are made with kale whil others call for cabbage. i'd like to add ham to it. what's the best hearty recipe you have ( Read more... )

Kale is cabbage. Or kale. It doesn't matter.

Well, at least in the British Isles.

Its about as simple as it looks and its extremely hard to screw up. Just use lots of cream and butter.

hm. i didn't know that...

kale here is considered "greens"...and cabbage is something totally different.

I live in England and kale and cabbage are very different vegetables to me. The recipe I have for colcannon uses savoy cabbage. The soda bread recipe I have is rather vague. It comes from an old copy of BBC Good food ( ... )

omg! thank you...though i kept thinking "wtf are you doing adding a ring?" but then i remembered what the traditions are behind it...

i think i like this time of year because my dna relates so well to it. ;)

Here's my recipe for Irish Soda Bread. I've noticed that it's worth getting a good buttermilk, rather than just using the powdered stuff.

i made colcannon from cooking light back in march-- the recipe should be on their site. it was VERY good, and VERY hearty, but it didn't have cream or meat in it (though it did have chicken broth) the ingredients i remember are onions, potatos, chicken broth, cabbage and thyme. i want to say- that's it! i couldn't believe how good it was

i use the irish soda bread recipe in "the best recipe cook book " and always have great results.

oh yes! i remember seeing the colcannon recipe in their march issue now that you mention it... all the recipes i've made from cooking light have gotten rave reviews here at the homestead...
