Hehe, I'm a wealth of recipes (collecting cookbooks turned from a hobby into an obession, and all the recipe websites online -- yeesh! I can cook about anything now!). No kids, though, I'm afraid =)
The graham crackers recipe I actually got on allrecipes.com -- here. It actually uses 2 cups wheat flour and 1 cup all-purpose; no graham flour (I guess they're not technically graham crackers, but they taste the same -- a bit softer, but I suspect they'll crisp up overnight). And they roll out like sugar cookies so you can cut them into any shape you want, which is nifty -- you don't always have to rely on rectangles/squares.
I used an awesome fresh honey in the recipe and I do have to say, it makes all the difference in the world in the flavor!
The chocolate is a mix of Icelandic milk chocolate (Sirius brand, available at Whole Foods -- and some of the best "plain" chocolate I've had) and Lindt bittersweet chocolate.

I'd love to know more about your graham crackers, too. Is it mostly whole wheat flour, or graham flour?
