I know! I always feel lazy about making pie dishes (and I LOVE savory pie-stuff) because of the crust. I stumbled upon another mini quiche recipe online (which used ham and american cheese, ew) using crescent rolls and realized how brilliant it was an immediately began planning.
If you have success with phyllo sheets, post the results! I'd love to try working with them, but I'm kind of intimidated.
Whenever I'm cooking something that involves phyllo, I keep putting that part off, because my brain's decided that phyllo is a lot of faff and effort. Every time, I end up wondering why I thought it would be so troublesome, when it actually wasn't. (And then I forget again until the next time).
