My local farmer's market sells quails eggs. If you have one, I'd check there.

I'd suggest maybe baking off the mushrooms a bit first. I'm afraid that the liquid they let off would just pool in the muffin tins. You could bake them (with olive oil and a sprinkling of salt) on a baking sheet and dump the water that accumulates, then put them in the tins and proceed as planned. I do this for stuffed mushrooms and it greatly improves the texture of the final product.

Otherwise, this would be a very cute brunch item and I've been looking for an excuse to use the quail eggs I see in my neighborhood market!
