Scrapple lunches

Contents: Butternut squash with Korean barbeque sauce (recipe at link), mini pudding cup, rolled egg (tamagoyaki) with sauteed broccoli stems and green onions, pre-frozen sandwich with cheese and sundried tomato pesto, crispy fried scrapple, and ketchup in the little container for the scrapple. I adore scrapple. So tough to get here, but it can be gotten. So nice to see it in a bento.

We used to make it when I was growing up. We farmed and here in Upstate NY, there are lots of PA Dutch decedents. Lovely yummy stuff.

I don't like it when it's mushy either. A little softness on the inside is okay, but I live for the crispy crust. I've never tried making my own scrapple, but it's not supposed to be that difficult. If I can't find any more locally, I'll consider it.
