The Vegetarian Who Loved Bacon: A Confession

There was a time that I considered myself to be a vegetarian.  I was content to eat greens, beans, rice, lentils, soy, and all the other foods vegetarians eat.

Somewhere along the road to good health, I had a flat tire.

Yummm! This sounds soo good! I had a vegetarian friend who was very strict about being a vegetarian except for bacon. She said that bacon was not meat. It was a seasoning! I have to agree.

Lately I find that it's only hard to be vegeatarian on the weekends. Last night was the exception. It was premeditated bacon consumption!

A vegetarian after my own heart!

I do a similar soup, but I use roasted red peppers instead of green, and add chipotle en adobo to it. A great dish.
