a twist on meatballs and pasta

This is a recipe I saw on TV on a local cooking show using mostly Michigan grown/made products. I thought it looked great and wanted to share.
I however, will be subbing ground beef for fish b/c my husbands allergic.

Totally unrelated to your post. iamnikchick February 16 2007, 21:39:13 UTC
I apologize for the whole off-topic comment but I've never met another Nici (though no one outside of family has called me that since Jr. High). Totally stopped me in my tracks to see it in your ID!

lol. well it steamed from a HS class where there were 4 Nicoles. We had to set ourselves apart somehow. So there was Nici(me), Nikkie, Nicole, and Nichole. It made it way easier for our teacher to grade things that way.
In anycase, it stuck in HS and then after that. My husband and father in law now just call me Nic.
And your right. Ive never met another one either. Soul mates? I think so.

You've got a lot of delicate flavors in there, and beef might overtake them. May I suggest ground turkey or chicken for them instead?

I agree that I would probably never eat fish out of the big lakes(if I even liked fish, which I dont).
And yes, one of the great things about Michigan is the apples. We frequently eat them right off the tree.
