i'm going to make red beans and rice for dinner tonight but because there were no ham hocks when i went to the market, i decided to substitute a cut-up ham steak. however, i was wondering when i should add it? i normally add the andouille sausage towards the end of the cooking so should i add the ham steak then or at the beginning? or does it ( Read more... )

It depends what you want. The more time the ham spends with the beans the more flavor the beans will pick up. However, the more flavor the beans pick up the less there will be left in the little cubes of ham. Me, especially since there is the sausage to put in at the end, I'd put the ham in at the beginning and make the beans taste their best.

If this ever happens again, check for smoked turkey wings or necks as a substitute for the ham hocks. I, again just my opinon, think they pick up(and put down)the smoke flavor better than most ham hocks.
