i'm going to make red beans and rice for dinner tonight but because there were no ham hocks when i went to the market, i decided to substitute a cut-up ham steak. however, i was wondering when i should add it? i normally add the andouille sausage towards the end of the cooking so should i add the ham steak then or at the beginning? or does it

If this ever happens again, check for smoked turkey wings or necks as a substitute for the ham hocks. I, again just my opinon, think they pick up(and put down)the smoke flavor better than most ham hocks.
