I much prefer forming the meatloaf in the center of a casserole dish and surrounding with vegetables to roast along with the meat. Potatoes and carrots work well, but depending on the loaf, other things can work better. I did a buffalo loaf with a honey glaze surrounded by apples and potatoes once that was really yummy.

That sounds wonderful. :) Unfortunately, potatoes and carrots would blow my diet. :(

Lots of other vegetables can be made to work for dietary restrictions. With less hearty vegetables, you may want to start the loaf alone, and add the vegetables later because they may not handle the long cooking time.

Even if you don't use vegetables, cooking in a casserole instead of a loaf pan makes the loaf a bit drier and drains much of the fat into the surrounding area instead of letting the loaf swim in its grease.

is it the diet of only eating things that are salty and high in fat. i like that diet too.
