Everyone has a meatloaf recipe. Mine is really simple but it does make a great meatloaf.

@1.5lbs of ground beef (sometimes I use a 50/50 beef/pork mix but the one above is all beef.)
2 eggs
@1 cup of ketchup
@2tbs chopped garlic
1 package of dry lipton beefy onion soup mix
1 package of dry lipton onion mushroom soup mix
about 6 good shots of hot sauce (I don't consider tabasco to be hot. If you're using tabasco, double that. I used Submission which is at least 2x as hot as tabasco.)
cayenne, to taste
black pepper to taste
oregano to taste
mazto meal (this varies in amount depending on how wet the mix is. I don't use breadcrumbs. There is a difference in how it tastes.)
fresh grated parmesan cheese

Just mix it all together in a bowl, adding the matzo meal last. I do it by eye, about a half cup at a time to make sure I don't overshoot it. You don't want the mix to be too wet or dry. This amount will vary based on all kinds of things including how humid it is.

After it's all mixed, just put it in a loaf pan, sprinkle it with cheese, and bake it at 375 for about 45 minutes, or until it looks like food.
