The Mother-in-law has asked for ideas about something to take to a Cinco de Mayo party.
Can anyone help?

We want something:
Easy
colourful
not a main course
not TOO much booze in it
simply porn-0-rific

My authentic mexican party food-fu is not strong.

My friend once made a dish called "Mexican Cheesecake" which was a spicy to-die-for dip-type-thing that was practically a meal in itself. I believe it was from the old standard red & white checkered Betty Crocker cookbook.

fruit salsas!

or combine the two and make jello shots with sangria and fruit in it!

But i think the party's being hosted by a Mexican expat.. so it might not go over as well as expected.

Spouse and I do the food for a Cinco de Mayo party every year... Haven't started working on this year's menu yet. Last year we did a sort of cheesecake with a cornmeal crust and red and green bell peppers. Perhaps too main-coursey. There's a great recipe in the New Basics Cookbook for a 3-layer dip using red bean pesto, black beans and something else (sorry, I'm at work and the cookbooks are at home). It's a bit labor-intensive, as you make all the layers from scratch, but very tasty.

I'll give it some more thought, since I need to start planning our menu!

Something like this could be done in cup cake papers to make individual servings.
