Gazpacho pasta salad.

We're not huge fans of pasta salads that are creamy and all mayonnaise-y, which means we don't have pasta salad a bunch around here. Until we came across a lovely pasta salad recipe in the April/May 2005 issue of Cook's Country. It's a tangy, refreshing gazpacho flavored pasta salad and it's delicious and wonderful and here it is:

Delicious! It looks like my pasta salad too. However, my dressing recipe is simply "light" Italian dressing augmented with a little extra virgin olive oil and whatever fresh herbs my garden will provide at the moment.
