You should definitely pull it apart. I would start with scarfs and progress to hats. There are some lovely patterns of all levels in the book Stitch and Bitch and I just got another book that has a fingerless glove pattern in it.

Take it from someone who's started about ten times more projedcts than she's finished, chanille doesn't re-use well at all. It de-fuzzes and frays and looks like doo-doo when it's knit again.
For re-knitting, you want a nice acrylic or the stuff I've been using lately (as in for the past five years or so)-- washable wool. I love he stuff. It's soft on the fingers, makes for easy care after the piece is done (or so they tell me) and knits easily. It doesn't fray much for the first six or seven times you un-do and re-knit it, either!
