Those cream puffs are perfect!

Yesterday I tried making cake in the microwave, like those japanese microwave cup cakes. Did you know you can make a sweet microwave steam cake with rice flour (and sugar and eggs and stuff) that actually rises and has pretty much the taste and texture of cake? Yum! And gluten free!

Intriguing! Do you have a recipe?

I've been pasting up a lot of foods on my evernote food notebook and there are tons of Indian recipes in there, with links back to the original blogs I snarfed them from.

(I'm grabbing copies now rather than just making links because one of my favorite GF bloggers stopped blogging, and canceled his domain, before I'd gotten around to trying the recipes!)

I will have to do more testing before I have a good recipe, but it was some tablespoons of rice flour (four? six?), approximately half that volume of sugar, two eggs, a pinch of baking powder, a splash of vanilla extract, a tablespoon or two of ghee, all mixed together. Nuked 3 minutes on high in a microwave safe bowl.

I will throw myself on the problem and try to standardize the measurements. More cake!

Found this recipe today:
Ingredients:
4 Tablespoons cake flour

4 Tablespoons sugar

2 Tablespoons cocoa

1 Egg

3 Tablespoons milk

3 Tablespoons oil

I subbed rice flour for the cake flour and ghee for the oil, nuked 3 minutes as per instructions and... meh. It was a little too gluey. But I will try my previous 2 egg cake sans baking powder, and if that doesn't work, I'll try this recipe again, but with baking powder added.
