Today I made barley water, which isn't nearly as dreary as it sounds, and confused myself by singing repeatedly there were three [occupation] in the [geographical direction], which really doesn't scan. Also made something vaguely like boerenkool stamppot, only with endives instead of kale, because it's really hard to find kale here, unless you grow ( Read more... )

There are places in Europe where you can't get kale? I thought it was the ur-brassica, or as close to it as still exists. (It's tough to find as a frozen green in the US, but there's always some in fresh produce.) I think of endive as being a lot sharper-tasting. The rest of the dish is potatoes, mostly? It's really a classic autumn dish.

I'm now craving foods I don't dare eat when I have cramps, darn it. (Potatoes are fine; brassicas not so much.)

How do you make barley water?

You can get kale at Christmas, usually. I don't know where they hide it the rest of the year... anyway, I think kale is out of fashion here in recent years, or maybe that's just my grocery store. Endives turn out pretty mild if you dump them in to cook alongside for the last few minutes. With the potatoes and onions. :)

Boil barley grains, use the barley-ified water along with lemon zest and lemon juice, along with some sugar or honey. There's oodles of recipes online, I see, although not the one I used which was cut from a newspaper ages ago (and has sugar instead of honey, though I prefer honey).

Yay, you made andijviestamppot! In my usual version, I put the endives in raw, cut up pretty small, after the potatoes are done, add some cheese and then mash up the lot. Is yum. Bacon bits and smoked sausage optional.

It is 17C or so in Tokyo and LOVELY weather, with the leaves all turning red and gold and looking fabulous. At home it's 3C and there's rain and snow, apparently, though am sure it's worse where you are. And tomorrow I'm flying back again, whyyyy did I think that was a good idea? Why not just stay here where the food is better and people understand the importance of tea?

I did! Maybe I'll try cheese. maybe. it comes out a bit too dry, to my mind (of course, I could pour off less water. it's a fine balance between dry and watery *g*). I saved the leafiest bits of the endives for after, but the coarser bits got a couple of minutes of being steamed.

I wish I were in Tokyo! It's -4C here and snow all over and supposed to get colder. bah. But i miss you!

I hope "three occupation in the geographical direction" sounds better in Swedish cos you know I don't think it's going to be the Christmas no. 1

After waking up to a lack of whiteness despite dire predictions, the damn stuff sneakily started whilst I was walking to work and looking for thermal insoles for Prague.

No, I can't get it to scan in any language, alas.

Boerenkool stamppot is a Dutch dish what marycrawford" taught me -- kale and potatoes and onions, with some salty meat or smoked sausage in. only I had endives because kale is rare here, though of course I saw it today, in the other grocery store. Spinach doesn't sound like a bad idea at all. (It rarely does, to me!)

Yuletide is definitely happy-making. :)

boeren = farmers, plural, but also "of the farmers"
kool = cabbage (see also 'cole' in the word 'coleslaw' which is the Dutch word 'koolsla' for cabbage salad, Americanized)
boerenkool = farmers' cabbage, aka kale
stamppot = mash-pot; meaning anything that is mashed up in one pot/pan together with potatoes

There, now you're all primed for one of the foremost Dutch culinary delights! :)
