for me, i find using the same recipes but substituting works well. less butter, more olive oil or canola, less egg yolks, etc, lowfat milk instead of whole, etc.
Lots of things from the cookbooks Looneyspoons, Crazy Plates, and Eat Shrink and be Merry, all written by Janet & Greta Podleski. They have a veggie chili that's wonderful, a chickpea chowder soup with no dairy and very little fat (that tastes wonderfully buttery all the same), recipes for sweets, and lots of funny bits throughout.
I make the chickpea chowder pretty regularly - I've made it enough times I can do it from memory now.

I make a simple cream sauce using fat-free half and half, I Can't Believe it's Not Butter, garlic, tomatoes, chicken breast pieces and basil.
I sort of just throw it together so I'm not sure how much of anything I really use.
I serve it over pasta ;)
