I bought some fresh mussels on Thursday and waited until yesterday to cook them, and about half had opened, which means half were wasted. Once they're open, they're dead, and could be going bad. I only steam mussels that are tightly closed.
I love them, though. They're like candy. And at a certain angle, they're shaped like vulvas.
I knew that if they were open to discard them but the package also said they should move when you tap them and none of them did that. It hasn't sworn me off them though. I love them way too much.
Do you ever go to the mussels and frites place on West 4th Street, with the little upstairs dining room? Or Florent, with their improbably large container of saffrom-imbued mussels? (My sweetie is not a mussels fan, so I take note of people who are.)
