Tonight, I took my mom's recipe for Tuna loaf and made it dairy and gluten free. Instead of the flour, bread crumbs, milk and butter that was called for I substituted Gluten free flour, gluten free bread crumbled into crumbs, soy milk and Earth Balance spread. The consistency was a little softer but the taste was spot on. Score ( Read more... )

This new diet sounds like it's gonna be a challenge. But you guys can do it. <3 Love. (I'll keep an eye out and see how it works. I've heard reducing gluten helps with certain mental health issues, so .. couldn't hurt!)

No, actually it has been very, very easy. If I were to have done this say, 5 years ago, it would have been a lot harder than it is now. There are so many gluten free products out there now that giving up the wheat is pretty easy. Right now, I am just starting so it's a matter of finding what I like. I haven't had to give up anything yet. And since I don't have celiacs, I will havethat slice of pizza at my favorite shop when the mood strikes. But overall, I think I feel a little bit better already.
