Tonight, I took my mom's recipe for Tuna loaf and made it dairy and gluten free. Instead of the flour, bread crumbs, milk and butter that was called for I substituted Gluten free flour, gluten free bread crumbled into crumbs, soy milk and Earth Balance spread. The consistency was a little softer but the taste was spot on. Score!

Also, pleased that Silk does not use GMO soybeans in their products so I feel a lot better about using their soy milk to cook. I'm looking into the possibility that too much soy intake can cause hormonal imbalances but so far, we are not ingesting enough of it to be a problem.

Switching to a gluten free diet has not been a hardship yet. Going out to dinner may pose a problem but I'm willing to bend the rules a teeny bit for special occasions.
